This is a variation on the kimchi pancake, using sauerkraut. Original recipe from here: https://www.maangchi.com/recipe/kimchijeon. If you like you can add all sorts to this, eg chorizo or chilli.

Serves 2

200 g sauerkraut
1/2 cup flour
1 scallion
200 ml water
Oil
  • Mix the kraut, water, flour, scallion and 2 tbsp of kraut brine in a bowl
  • Heat some oil in a non-stick pan
  • Tip in the pancake mix (you can do it in small batches to make flipping easier)
  • Cook for 3 - 5 mins, until firmed up
  • Flip and coo the other side for 3 - 5 minutes
